As the Easter holiday approaches, consumers may be on the lookout for their Easter dinner ham. Total consumption of pork, in general, has remained relatively constant in recent years. Total pork disappearance per capita has hovered around 50 lbs. per year for the last few years. USDA projections anticipate 2025 pork disappearance levels will slightly decline after a slight increase in 2024 numbers.
