Cottage cheese onion dip

Ingredients:
16-ounce container of full-fat cottage cheese
2 tablespoons extra virgin olive oil
2 onions, thinly sliced
2 garlic cloves, minced
1/2 cup water or broth
2 tablespoons balsamic vinegar
Salt and pepper, to taste
Instructions:
- Heat olive oil over medium heat. Cook and stir onions for 15 minutes or until tender. Reduce heat to low, stirring frequently.
- Stir in garlic, salt and pepper. Continue cooking for 15 minutes longer or until onions turn a deep golden-brown color.
- Add water or broth, and reduce until liquid has evaporated. Add balsamic vinegar, and remove from heat to cool to room temperature.
- Blend the cottage cheese in a blender or food processor until smooth. Then add onion mixture and more salt and pepper, to taste.
- Serve at room temperature or chilled, with cut vegetables, chips and/or whole-wheat crackers (such as Triscuits).
